Bo.lan restaurant stands in Bangkok. Over the years hardcore foodies have often lamented the absence of a true worldclass food scene in Thailand's steamy capital of 10 million. With food second only to religion among Thailand's most highly revered, there's no shortage of tasty street food to be had and sweet, savoury and spicy flavours to be discussed. Yet, to well-travelled taste buds, fine dining has largely taken a backseat to Bangkok's more established activities of visiting glittering temples, shopping for bargain basement deals at markets and partying in the capital's legendary nightlife. A number of trendy restaurants have come and gone over the past decade, but out of their ashes a fresh, new and exciting food movement has emerged, one that is shaking up the status quo and raising the bar for food in Bangkok. This new group of indie restaurants aim to go beyond the barcode, backing up critically acclaimed menus with a shared ethical foundation on sourcing local, organic and free-range products. While already firmly established in the West, these concepts are just taking root in Thailand and delivering tastier, greener and more nutritious cuisine that you can consume with a healthy conscience.
