Chef Black, who's full name is Phanuphol Bulsuwan, prepares fermented Wasp Worms Relish, Crispy Wasp and Grilled Bamboo Shoots in his restaurant Blackitch Artisan Kitchen in Chiang Mai. His 16-seat restaurant is open through reservation only and he personally designs each menu differently for each group of diners. He also tries to only use and source local produce from around Thailand, especially his own province of Chiang Mai.
