A Thai member of staff pushes boxes of fully grown crickets to the harvesting room of Cricket Lab. Cricket Lab began operation in 2018 and produces high quality cricket flour by the ton in its modern facility in Chiang Mai Province of Northern Thailand. The farm breeds the crickets themselves from eggs and grows them in plastic crates which are part of a 6m high vertical farming system. In this highly controlled environment where the crickets are kept in the dark, the company is able to meet European and US health and safety standards and export their product to western markets.
