Truffles are cleaned of soil in the kitchen at Woodford Truffles on the family farm, where they cultivate Black Winter Perigord truffles in an orchard of specially-planted oak trees, close to the town of Ceres, in the Western Cape Province, on July 15, 2021. Here, the truffle season lasts between the last week on June to early August. - It took six years of trial-and-error, and tonnes of calcitic lime to redress soil acidity, before the first truffles were unearthed.
