Thai staff member Thanit Biakaew enters one of the pools to catch the fish ready for milking at the Thai Sturgeon Farm. Milking is the process whereby the caviar is massaged out of the pregnant fish without hurting or killing the fish. Completing its construction in 2016 the Thai Sturgeon Farm Co.,Ltd is a high-tech, environmentally sound sturgeon farm run by a Russian father and son have a predicted output of 1.5 tonnes of caviar per year. Having waited for 5 years for the fish to mature this is their first harvest.
