Every fish that is 'milked' for caviar is tagged and logged with the amount of eggs produced by each fish recorded by Thai and Russian staff. Milking is the process whereby the caviar is massaged out of the pregnant fish without hurting or killing the fish. Completing its construction in 2016 the Thai Sturgeon Farm Co.,Ltd is a high-tech, environmentally sound sturgeon farm run by a Russian father and son have a predicted output of 1.5 tonnes of caviar per year. Having waited for 5 years for the fish to mature this is their first harvest.
